The predominant class of wheat grown in Washington is soft white wheat, milled by domestic and international buyers for confectionary items such as cookies, pastries and cakes; crackers; and flatbreads in Middle Eastern countries. Washington also produces hard wheat, including hard red and white winter wheat, and hard red and white spring wheat. About 80 percent of the wheat grown in Washington is winter wheat and about 20 percent is spring wheat.
